The patented sheeters from the CILPRESS series are the most state of the art in the field of mass production of flake or layered pasta. The revolutionary concept and the innovative pasta processing system bring out some important questions about how other and current processing machines work. Fresh pasta processing through sheeters, which up until now was also proposed through processing with extrusion screws, has now found, with this machine, a natural evolution in technology that unmistakably brings out the qualities of both types of pasta processing. Normal sheeters processing is carried out through kneading machine rollers that press the dough towards a pair of calibrating rollers, which – through stretching and then compression – obtain the final flake/sheet. As a result, the mechanical stress, and in some ways the thermal stress, on the pasta is quite high. Moreover, the problem of rejection subsists, when the pressure between the kneading rollers and the calibrating rollers is such that part of the dough goes back in the hopper, and is then re-processed, resulting in obvious damages to product quality. In the CILPRESS sheeters, the pasta – through a pair of specially moulded rollers – is compressed within a maze design created by the mutual rotation of the rollers. The pasta flake/sheet obtained directly from the moulded rollers has not undergone any useless mechanical stress and has the same temperature as the original dough. In this way, the temperature of the pasta is exactly the same as the original dough, giving remarkable advantages regarding the organoleptic and mechanical qualities. Furthermore, the fact that the process lacks a compression zone gives the machine a simpler construction, thus making cleaning easier while also allowing for the simultaneous production of different colour pasta.
