Industrial kneading machines from the GRIM 330 series have been designed and developed for fresh pasta products that need to maintain consistent and high quality dough during the entire production cycle. With this goal in mind, special technical aspects have been designed in order to allow for dough consistency during the entire process, eliminating manual intervention by the operator as well as external conditions, which not only changes during the production cycle, but can also influence the final product’s quality in a negative way.
In order to be able to reach these goals, the entire process is carried out with PLC, which manages all the process variants during production while also monitoring and carrying out a series of corrective measures based on parameters set by the operator.
Moreover, the software makes it possible to adapt production to the actual dough requirements, which are needed later in production, without compromising in any way the desired quality or quantity of the product.
Building characteristics:
Constructed completely in AISI-304 stainless steel.
Load-bearing single block built with round tubular section in order to allow for complete draining of cleaning materials.
Railing and ladder built in round tubular sections, joined with the load-bearing block, making it easy to assemble and set up along the entire outer portion of the kneading machine.
Walk-on area with special round relief, preventing slipping and allowing for quick cleaning and sanitization.
Dough basins with clean contour and heightened thickness; rounded corners and non-stick surface treated for wear and lids are made in transparent polycarbonate with hideaway hinges complete with gas shock absorbers. The doors for continuous running load are located on both basins and are activated by pneumatic activators made in AISI-304 stainless steel.
Kneading shaft with flat blades and attached with special anti-cling screws. Supports are spaced out from the kneading zone and have double edged hold. Activation is made by transformers with direct contact orthogonal axles and spaced out as not to transmit heat to the kneading basins.
Continuous dosing unit of grinds through cochlea volumetric dosing unit, activated by an inverter.
Continuous dosing unit of liquids through peristaltic pump, activated by an inverter or dosing carried out through a centralized external dosing unit.
General electric panel and command console are made in AISI-304 stainless steel with cabled wiring on board and connection between the various components through round section watertight cable trays. The commando console is equipped with an HMI touch screen control panel.
